Saigon Flavors Asian Cuisine - My First Time Eating Pho

My trip to Saigon Flavors began with the intention of going to this new Indian joint over by the Mall of GA. I drove by it a couple times recently and thought I should stop by since I dig Indian food and there isn't a spot that close to my house. When I drove up I saw there was a hand written sign on the door that said 'Closed -the management' and then a printed sign in the window that said 'Coming Soon'. I'm not sure what the promotional strategy there is, but it was too sophisticated for me, I suppose.

I remembered a new Asian restaurant that took the place of Noodle Mi just past the mall, so, feeling adventurous, I headed on over not even knowing the name.

 It was pretty freaking cold here today, so soup seemed like an appropriate choice. Always hearing how great pho is,  but never having tried it, I figured today would be the day. I ordered the P1: brisket, steak, beef tendon and meatball. (Pan Saigon Dec Biet)
 

He brought out a giant bowl of soup and a plate with bean sprouts, jalapenos, basil and lime. I added a little bit of each a mixed it all up with some sriracha and hoisin sauce.

 The broth was fantastic. I'm not going to pretend to know what is in the broth, but it was great. The beef  was tender and the beef tendon had a soft, buttery texture I didn't expect. When I was ready for noodle I thought I would be underwhelmed since they looked like plain white noodles but the soak in delicious broth and spices  made even those taste great. And, like I mentioned, the portion was HUGE. I ate and ate but was only able to finish half of it. I did pick all the meat out though.
