Lunch at The Original Smoke Station

They now have a lunch buffet, so I tried it out today for lunch. Tons of pulled pork, cole slaw potato salad, and baked beans with pulled pork. There was also sausage, fried fish, bbq chicken, and green beans on the buffet.

Key West Style Cuban Chicken Soft Taco

3 different styles mixed into one meal. Doesn't sound good, but it was. First time I saw the marinade in the store. I figured I would give it a shot and grill up some chicken that had soaked in it. In trying to figure out something different with the chicken I looked in the fridge and came up with the soft taco idea. I fixed up some red beans and rice, along with some corn, to go as sides for this meal. A little melted cheese and some caramelized onion topped off these tacos. Nothing else was needed on these bad boys as they were excellent as is.

Brisket, Baked Potato, & Lima Beans

The brisket was prefect and the baked potato (with sour cream, butter, colby jack cheese, and scallions) was the perfect compliment of a side dish.

Caramelized Vidalia Onions

Not many things mark spring like Vidalia Onions. I love to caramelize them and have them as a side or garnish to whatever I am eating. Very simply these are cooked in a little bit of olive oil, cracked black pepper, and a little garlic. These things are so sweet to begin with, but the onions take on a whole new level of sweetness when prepared like this. It is almost like eating Vidalia Onion Candy! Tonight I ate them with grilled pork chops and lima beans. Last night it was Parmesan Crusted Chicken, Rice, and Fresh Fruit.
