Spaghetti. Old Faithful.

Basic suburban America spaghetti dinner. Basic noodle, basic bread Sauce was home made with local beef though. My wife doesn't really follow recipes and wings it for the most part, but as far as classic spaghetti goes, this was on top. Pic was from a few nights ago and I just had some more for lunch. Top notch stuff.

Spaghetti & Meatballs

Meatballs were made with some TLC along with garlic, basil, oregano, an egg, and a sprinkling of breadcrumbs. They were then baked at 325 to brown the outsides before taking a long simmering bath in the sauce. Grated some fresh cheese on top and it was perfection. These were some tasty balls!

Quickfire Chicken Cacciatore

This is Chicken Cacciatore made on the fly in no time at all. Chicken cutlets are seasoned with garlic, pepper, oregano and basil. They are then browned off in olive oil before being simmered down in the sauce. Normal Chicken Cacciatore has some white wine in it, but not when cooking on the fly for a 2 year old. The sauce can be easily made from scratch, but I took the easy way out and used the best that you can get out of a jar. Classico Caramelized Onion & Roasted Garlic Pasta Sauce, imo, is some of the best stuff you can get out of a jar for on the fly cooking. This was an excellent quick dinner that was done in under 30 min.
