Chicken Finger Spinach Salad with Sweet Vidalia Onion Dressing

Nothing that fancy with this salad: Spinach, mozzarella & provolone cheese, mushrooms, craisins, bacon bits, and some heated up leftover chicken fingers from Publix. I usually like to make my own dressings, but I decided to give this Vidalia Onion dressing a chance and it didn't disappoint. It worked well with the spinach and provided a nice compliment to the chicken.

"World Famous" Green Jacket Salad...

The old Green Jacket restaurant in Augusta was World Famous for not only being a damn good joint across the street from The Augusta National's front gate. It was world famous for their house salad dressing and the Green Jacket Salad. This dressing includes tomatoes and scallions and is spooned over the lettuce. I also made some garlic pita croutons and then topped off the salad with some salmon. The croutons are cooked in a pan with some olive oil and then baked in the oven to get extra crispy.
