Passover Traditional Food - Matzo Brei

There are many different ways to make a matzo brei, but there is no better way than the way I was taught by my mother, grandmother, and great grandmother. The way we make it in our family is a 4 step process. Step 1: You wet the matzo and then break it into pieces. Step 2: Beat some eggs and coat the matzo. Step 3: Cook in the pan like you are scrambling eggs. You can also cook it as one giant piece like an omelette. Sometimes I will cook it this way, but most often I do it a little of both methods. Step 4: Plate and serve with either syrup or preserves. I usually go for the preserves and tonight it was kosher for passover cherry preserves. It really doesn't get any better than this.
