Fancy Friday - Stuffed Chicken

The given names of days aren't good enough for my wife. They need more character, she says. So Friday is Fancy Friday. We have been eating in on Fridays pretty often lately, but we'll have cooler stuff like ribeye steaks or a nice piece of fish. This Fancy Friday was stuffed chicken. Chicken breast stuffed with roasted red peppers, spinach and mozzarella. Sides were spinach salad with homemade red pepper dressing and some broccoli.
