Coconut Banana Paleo Ice Cream

I've been toying around with this recipe for a week. Around the web I saw recipes for paleo ice cream with coconut milk berries or whatever and little vanilla. Tried a couple different things out earlier in the week and I think I've got it.

-1 can coconut cream (coconut MILK wasn't rich enough)
-1 + a little of another banana
- ~1tsp vanilla

Turned out really good. Just have to make sure it doesn't spend too much time in the freezer, it will turn into a rock. I think 1-1.5 hours is probably enough time. The great thing about this, aside from it falling within the Paleo Diet parameters, is that while the calorie count is pretty high (probably around 1000 cals for an entire batch) the calories come mostly from coconut fat instead of sugar and other weird stuff. I split this into a few smaller servings with about 300 calories and 15-20 carbs each. I'm going to continue to experiment with the now that I've got the basic gist down. Probably add some cocoa powder, strawberries, pineapple, steak...the possibilities are endless.

  1. That sounds good. I happen to have some bananas that need to be eaten AND a can of coco lopez coconut cream. I may have to try it.

  2. When this post came through on Google Alerts with just a snippet of the article, I was all set to come jump on you pointing out the agave nectar isn't close to being paleo. But once I read your recipe I agree, you made it within paleo diet parameters.

    I don't know about the steak, but maybe crushed nuts?

  3. Dave - I don't know what you planned on doing with the coconut cream but this is worth a shot in my opinion. I'm guessing you were going to make some kind of tropical beverage with it - this would be pretty good with some rum in it...

  4. Don - yeah, no nectar or any added sweeteners. the bananas provide enough sugar to sweeten it plenty for my tastes. I don't know anything about agave nectar but if I were to add some more sweetness I'd probably use honey first. if something really needs added sugar then I break free from trying to call it paleo at all just so I can feel better about myself and pretend it's good for me. i like to minimize the gray areas.
