Bakes salmon on top of fresh spinach, mushrooms, sweet orange and yellow peppers, pita chips and a balsamic dressing that I made. I then made a pineapple-mango salsa to go on top of the salmon. In this was pineapple, mango, tomato, Vidalia Onion, jalapeno, cilantro, salt, pepper, and lime juice. A little scallion was used as a garnish and to give just a little more bite to the salad. Everything about this salad was perfect. Especially for dinner on a summers night.
