Catalina Apricot Chicken....

Very simple recipe: 1 packet Lipton Onion Soup mix, 16oz bottle of Catalina dressing, and 1 jar of apricot preserves. Mix it all together. Line the bottom of a baking dish and lay chicken into said dish. Spoon 3/4 of remainder over chicken and bake at 350. Use remainder of sauce for basting or heat on the side as a glaze foe when it comes to plating.

Oyster Bay Seafood Cafe in Lawrenceville

We went to Oyster Bay Cafe in downtown Lawrenceville. ordered a few different things and shared most of it.
1. oysters
Verdict:
Not bad. Not awesome beach tier food, but not bad for downtown L'ville. My only real complaint was that the grouper was a little thin. I like thick ass grouper sandwiches.

BBQ Chicken Burrito....

We went to this new Tex-Mex place tonight called T-Rex Mex. It wasn't all that it was cracked up to be. I ordered the pork quesadilla, but they were all out of pork. So, I ended up going with the BBQ Chicken Burrito. Well, as you can see...it was more beans than anything else. Paying for it now. Everything was rolled into a honey wheat tortilla. The bad ass board was decoration hanging on the wall above our table.

Lunch today down at the Cafe was baked tilapia with some peppers and onions tossed on top. Also had some red and black pepper on it. It was pretty good I thought. And heart healthy. Instead of the rice they wanted to give me on the side, they agreed to load me up with some fresh fruit. Apples, oranges, cantaloupe, honeydew, and grapes.

after my long Krav Maga test all I could think about was murdering an entire large meat lovers pizza. I figured that would take too long to be delivered/picked up so I went with some stuff we had a home:
a salad that is really just nothing more than a pile of spinach and some grape tomatoes. I got lazy when I was making it.
Some leftover lasagna my mother in law made. pretty damn tasty but my wife's is better.
washed it down with a beer from the beer of the month club. Choc Brewery Miner Mishap. I was craving a dark beer for some reason. This fit the bill.

I was going to make another one of those kickass chicken salads but I wanted a hot meal so I decided to make a quesadilla with a smattering of different stuff I had in the fridge. Used the best wraps ever, lined the inside with garlic spread, feta cheese and some pieces of a grass fed cow I cooked saturday.

Tonight I took Sweet Peru Onions and roasted them with some mushrooms. No matter what you hear, these Peru Onions are actually sweeter than Vidalia onions. The people in Vidalia even told me that, but they hate to admit it. Anyway...Cut the onion in half and sprinkle with olive oil, balsamic vinegar, cracked black pepper, oregano, salt, and garlic powder. Bake at 350 for 1 hour closed in tin foil and then open up for the last 15 min. The first pic is after prep and before it went into the oven. The second pic is after it came out of the oven. I then made some wild mushroom couscous, which became the bottom layer on the plate for the grilled pesto chicken. The roasted mushrooms were layered around the chicken and on top of the couscous as seen in the third picture. The final product had a little feta on top of the chicken. Everything was outf'nstanding!

What we've got here is some lettuce, topped with a seasoned chicken breast (ton of garlic, garlic salt, garlic pepper, etc, hot sauce, whatever else looked good in the spice drawer) some cucumber, grape tomatoes, broccoli, feta cheese (weird, i know, but I had some and it went just fine with it) and all topped with lite southwest ranch. Best salad I've ever made.

Not bad actually. I usually add peanut butter but for some reason I wanted an apple after Krav Maga yesterday. Since I was too lazy to chew I cut it up and threw it in with my protein powder and some peanut butter. I don't think the average person would enjoy it but if you're used to drinking shakes/smoothies 1-2 times every day like I am it's a welcomed change.
